餐飲業東西當天賣不完該如何處理? - 服務業討論

小弟我本身做餐飲
但是對於公司規定說剩下的東西
員工不能吃也不能帶回家 若是真的想吃也只能自己掏腰包買
而必須全部倒掉的規定 對此頗有微詞
尤其是吃到飽餐廳食材準備之多真是超級浪費的
又不能冰起來把不新鮮的食物留給明天的客人吃
於其全部倒掉不如讓工作一整天飢腸轆轆的員工享用
何必便宜豬呢? 台灣的廚餘還嫌不夠多嗎?
還記得阿基師日前在餐飲比賽上對浪費食材一事發表看法
深深地則背了未善用食材的餐飲科學生
但是也是有些許知名餐廳的做法食材之浪費
讓小弟覺得十分的矛盾與不解
有沒有餐飲管理階層或知情人士知道上述作法的"理由"為何?
